These shots are from the beginning of the movie when Remy gets to Gusteau's kitchen and sees that Linguini dropped the sauce, as he tried to fix it he just started adding ingredients, not knowing what he was doing of course. Remy knew that Linguini was ruining the soup and that if he could get in there he could fix it. In this images we see Remy adding the last ingredient that would make the soup a great success. The soup went out to the customer and she loved it. This is how Linguini got his promotion.
